Ingredients:
100 mls fresh lemon juice
80 g / 2.8 oz sugar
2 eggs
70 g / 2.5 oz unsalted butter
3 g / 0.1 oz grated lemon zest (optional)
Method:
Place all the ingredients into a pyrex bowl and stir over a pan of hot water (carefully!). Stir slowly until all the ingredients blend and your spoon or hand whisk leaves a trail in the curd. Remove from heat and pour into a clean, glass bowl to cool.
Once cooled a little....take a teaspoon and scoop out a good amount. Place the teaspoon into your mouth and empty the contents! Repeat this process until you are satisfied that the curd is actually PERFECT! :o)
